Track three things: cycle time, ice quality and condenser cleanliness. All three drift before a machine fails, and all three are visible without tools.
Give the machine air. Clearance around the condenser is the cheapest reliability improvement available, especially in hot Rustenburg kitchens.
Assign the daily and weekly duties to a named role rather than to whoever notices. Unassigned cleaning is cleaning that does not happen.
